Adopting a plant-based diet may be the most potent single step we could take toward personal and planetary health and sustainability, emotional and spiritual fulfillment, and world peace. Our required nutrients are all available from plant sources. That should be sufficient reason for us to stop depriving animals of their freedom, their joys, and their lives. But when we also consider the fact that chronic illness, due largely to the consumption of high cholesterol, high fat animal products, is now threatening to bankrupt our health care system… that meat and dairy production is so inefficient that our existing farmlands could feed at least five times as many people if we grew only plants for human consumption… and that “livestock” produce far more climate changing greenhouse gases and cause more environmental degradation than all combined forms of transportation… It’s very clear that we need to begin making the shift to a whole foods, plant-based diet.
